Nose

Cruz del Mar Fino from Bodegas César Florido is one of the most compellingly authentic sherries produced in the Jerez region today. Made from 100% Palomino Fino sourced from the Balbaína and Miraflores pagos, this terroir-driven fino undergoes a minimum of three years of biological ageing under a continuous, dense veil of flor in old barrels — an artisan process increasingly rare even within the Marco de Jerez.
Founded in 1887, César Florido is the oldest bodega in Chipiona and one of the most historically rooted producers in the entire denomination. Its most distinctive asset is geography: one of its cellars sits barely fifty metres from the Atlantic Ocean, making it the most maritime bodega in the region. That proximity shapes everything — the flor thrives year-round in the coastal humidity, imparting a saline, briny character that is unmistakably oceanic. César Florido is also one of only a handful of producers who bottle their own estate-grown sherry, fermented spontaneously and released unfiltered and unfined — a true en rama expression.
On the nose, Cruz del Mar opens with classic flor-derived notes of fresh mushroom, Marcona almond and a lift of lemon zest that keeps the bouquet lively and precise. Bodegas César Florido is one of the most singular and enduring references in the Jerez wine region. Founded in 1887 in Chipiona, it is the oldest winery in the town and one of the most historic in the entire area. Yet the family's connection to viticulture stretches even further back, to the 18th century, with each generation passing down the tradition uninterrupted to César Florido, the sixth generation at the helm of this independent family estate. What truly sets this winery apart is its unwavering commitment to artisanal winemaking at a time when industrial processes have reshaped much of the region's production. César Florido presses his own must from family-owned vineyards, relies on native yeasts for fermentation, and has been bottling at the winery since 1988. This meticulous, tradition-driven approach yields wines of remarkable personality, faithfully expressing the climate and heritage of Chipiona in every glass. Moscatel is, without question, the house's defining wine. The Moscatel Dorado, a benchmark for classic sweet wines of the area, offers aromas of orange blossom and jasmine with a palate where honey and raisins meet elegant structure. The Moscatel Especial incorporates arrope — must slowly reduced over heat — after fermentation, adding further layers of flavour and texture. Together with the Moscatel de Pasas, these three wines form a celebrated trilogy that has earned numerous international awards and elevated César Florido to cult status among the world's most discerning wine lovers. Beyond moscatel, the winery produces small-batch examples of the full range of wines native to the region: Fino, Manzanilla, Cream, Oloroso and Amontillado, with the latter two regarded as among the finest of their kind. All wines are protected under the Jerez-Xérès-Sherry and Manzanilla-Sanlúcar de Barrameda Denominations of Origin.
