Bodegas Barbadillo is one of the most iconic and historic wineries in Jerez de la Frontera, founded in 1821 by Benigno Barbadillo. With over two centuries of history, the winery has become an undisputed benchmark for Sherry wines and a pioneer in the revival of still white wines from the Marco de Jerez. Its most widely recognised wine is Castillo de San Diego, one of Spain's best-selling white wines for decades, crafted from the Palomino Fino grape. Yet Barbadillo's reputation extends across its full range of fortified wines: Manzanilla, Fino, Amontillado, Oloroso, Palo Cortado and Cream, all produced using the traditional criaderas y soleras system, which allows wines to undergo biological or oxidative ageing over many years — sometimes decades. Among its most acclaimed labels is Manzanilla Solear, one of the most prestigious Manzanillas from Sanlúcar de Barrameda, aged under a veil of flor yeast in cellars close to the Guadalquivir river. The winery also produces highly sought-after limited releases such as Manzanilla en Rama Solear, prized by connoisseurs for its raw freshness and unfiltered character. Barbadillo owns vineyards in Pago Balbaína and other key zones within the Marco de Jerez, working with native varieties including Palomino Fino, Pedro Ximénez and Moscatel.
