Manzanilla Florido is the flagship expression of Bodegas César Florido, a family-run sherry house in Chipiona with an unbroken winemaking lineage stretching back to the eighteenth century. Now in its sixth generation, the estate remains one of the most committed artisan producers in the Jerez frame, bottling its own wines from estate-grown Palomino Fino vines rooted in classic albariza soils — the chalky, moisture-retaining bedrock that defines the very best terroirs of the Denominación de Origen Jerez-Xérès-Sherry.

Elaborated through traditional biological ageing beneath a living veil of flor yeast, this manzanilla develops its distinctive character slowly and naturally, shielded from oxidation in a way that preserves remarkable freshness and a pronounced mineral edge. César Florido's decision to ferment with native yeasts and maintain small-batch production sets this wine apart in an appellation where industrial practices have become increasingly common. The result is a sherry of rare authenticity and individual personality.

On the nose, Manzanilla Florido offers a refined and inviting bouquet: fresh almond, green apple and delicate herbal notes underscored by a briny Atlantic salinity that speaks directly of Chipiona's coastal position. The palate is dry, light-bodied and beautifully alive, with a silky mouthfeel, crisp acidity and a precision that makes it endlessly refreshing. The finish is long and pleasantly pungent, with lingering almond and a saline-mineral persistence that invites the next sip.

This is a supremely food-friendly wine, pairing brilliantly with fresh shellfish, grilled fish, anchovies, Ibérico ham and briny tapas. It also shines as a standalone aperitif, its vibrant structure and low residual sugar making it one of the most versatile food wines available. For those looking to buy premium Spanish sherry online, Manzanilla Florido by César Florido represents exceptional value and genuine craftsmanship. Serve well chilled at 7–9°C and enjoy promptly after opening to capture its full, vivid character.

The Winery

Founded in 1887

Bodegas César Florido is one of the most singular and enduring references in the Jerez wine region. Founded in 1887 in Chipiona, it is the oldest winery in the town and one of the most historic in the entire area. Yet the family's connection to viticulture stretches even further back, to the 18th century, with each generation passing down the tradition uninterrupted to César Florido, the sixth generation at the helm of this independent family estate. What truly sets this winery apart is its unwavering commitment to artisanal winemaking at a time when industrial processes have reshaped much of the region's production. César Florido presses his own must from family-owned vineyards, relies on native yeasts for fermentation, and has been bottling at the winery since 1988. This meticulous, tradition-driven approach yields wines of remarkable personality, faithfully expressing the climate and heritage of Chipiona in every glass. Moscatel is, without question, the house's defining wine. The Moscatel Dorado, a benchmark for classic sweet wines of the area, offers aromas of orange blossom and jasmine with a palate where honey and raisins meet elegant structure. The Moscatel Especial incorporates arrope — must slowly reduced over heat — after fermentation, adding further layers of flavour and texture. Together with the Moscatel de Pasas, these three wines form a celebrated trilogy that has earned numerous international awards and elevated César Florido to cult status among the world's most discerning wine lovers. Beyond moscatel, the winery produces small-batch examples of the full range of wines native to the region: Fino, Manzanilla, Cream, Oloroso and Amontillado, with the latter two regarded as among the finest of their kind. All wines are protected under the Jerez-Xérès-Sherry and Manzanilla-Sanlúcar de Barrameda Denominations of Origin.
