The winemaking is clean and precise: the fruit is fermented and aged for four to five months in stainless steel tanks at controlled temperatures, preserving the full aromatic intensity and mineral freshness that define this terroir-driven white.

Founded in 1989
Pazo de Señorans is one of the benchmark wineries of the Rías Baixas Denominación de Origen, located in the village of Meis, in the Salnés subzone of Pontevedra, Galicia. The estate was acquired in 1979 by Marisol Bueno and Javier Mareque and includes a fully restored 14th-century manor house and 12 hectares of vineyards, many of them trained on the traditional Galician pergola system. Commercial winemaking began in 1989 with the first bottled vintage released to the public in 1990. The winery's philosophy is built on absolute respect for the Albariño variety, producing wines with a distinct varietal character that faithfully expresses the identity and potential of this noble Atlantic grape. Marisol Bueno's curiosity about the aging potential of Albariño led her, in 1995, to create the winery's flagship: Pazo de Señorans Selección de Añada, a white wine for aging that undergoes extended lees aging in stainless steel tanks for 30 months or more, achieving exceptional structure, complexity, and finesse. This wine was named Best White Wine in Spain by the International Wine Challenge and received 93 points from Robert Parker's The Wine Advocate. The winery also produces the Pazo Señorans, a consistent entry-level Albariño with approximately 300,000 bottles per year and one of the most reliable labels in the appellation; Pazo Señorans Colección; Sol de Señorans; Novembro; and Tras los Muros, a barrel-fermented Albariño crafted by Berta García, daughter-in-law of the founder, who trained with legendary producers in Bordeaux and Burgundy. Marisol Bueno served as president of the Rías Baixas D.O. for twenty-one years, from 1986 to 2007, leaving an indelible mark on the region. Today, the winery remains entirely independent and family-owned, with the second generation — the four children of the founding couple — actively involved in the project.
